You can make great tasting ice creams and sorbets with no preservatives, no stabilisers, no emulsifiers... no additives whatsoever. Because of the lack of preservatives, you should only keep your resultant delicious desserts for a maximum of a week. I don't think this should be any hardship, however! You will have mouth watering ice cream, control over what goes into it, and lots of delicious recipes to choose from.
I have two suggestions for you to think over... • First... are you still thinking about whether you are sure you would use an ice cream maker? Then you could go for one of the cheap pre-freeze models, the only ones I have found are by Kenwood. You can try out the recipes, see if ice cream making is for you... if it is, why not save up for a real ice cream maker? The only problem with this advice is that now that the new autumn ranges and catalogues have come in... ice cream making is OUT! So to get one of the cheap models I'm afraid you will have to scour the sales... until the new summer stock comes in in December! • Second... just go for it! What I mean by that is... get the appliance which all the professional and celebrity chefs recommend and use, which comes out as a best buy in all the online reviews, consumer advice, and cookery magazines. Only one downside to this, the price... but it is in effect a mini freezer which also has a secondary job to fulfil, that of mixing and making your delicious ice cream... so I'll just have to save up to buy one! These were still available when I checked. I have seen the Gelatiera recommended as the best since July 1999... and it is still simply THE BEST. It now has a serious rival in the Magimix Gelato Chef 2200, which you can also find at the supplier recommended below. If you go for the ordinary model [not the stainless steel one] you will find it is about £70 cheaper. So, if you really want to enjoy and make ice cream, and have the room to keep one of these wonders on your worktop why not go and visit... The ice cream maker is called the Gaggia Gelatiera and I'm afraid the price tag is in the region of £270, but worth every penny if you really want to make first class ice cream. Delivery and VAT are included at Be Direct, so the price you see is the price you pay... in fact you'll find it extremely hard to find better prices anywhere.
